What Does E410 (Locust Bean Gum) Mean on a Food Label?
Reading an ingredient label and spotting E410, or the words locust bean gum or carob bean gum, leaves a lot of shoppers wondering what they are actually eating. What the E410 code tells you
In the European and UK system, every approved food additive gets an E-number. Numbers in the E400 to E499 range are thickeners, stabilisers, emulsifiers, and gelling agents. E410 specifically is locust bean gum, a soluble fibre milled from the seeds of the carob tree, Ceratonia siliqua. When you see it on a label, the manufacturer is telling you they have added a small amount of this natural gum to control the texture of the product.
Why manufacturers add it
Locust bean gum is prized because a tiny dose, usually well under half a percent, has a big effect on how food feels in the mouth. As a thickener and stabiliser it:
- Gives sauces, soups, and dressings a richer, fuller body without extra fat.
- Prevents ice crystals in ice cream, keeping it creamy even after the freezer door has been opened many times.
- Stops watery separation (syneresis) in yoghurts, cream cheese, and plant milks.

Is it natural or artificial?
It is natural. Locust bean gum is simply purified carob-seed endosperm; no synthetic chemistry is involved in making the basic gum. How to tell how much is in your food
EU and UK labelling rules list ingredients by weight in descending order. Because E410 appears near the end of almost every ingredient list, you can be confident the amount is very small, typically a fraction of a percent. It will usually sit alongside its job description, for example thickener (locust bean gum) or stabiliser: E410.
Often seen with other gums
Locust bean gum frequently appears next to xanthan gum (E415), guar gum (E412), or carrageenan (E407). This is deliberate: these gums work in synergy, so combining them lets the manufacturer use even less of each while getting a firmer, more elastic texture. Seeing two or three gums together is a sign of careful texture engineering, not of a problem.
Is E410 something to worry about?
No. The European Food Safety Authority reviewed locust bean gum in 2017 and raised no safety concern at the levels used in food, and the US FDA treats it as Generally Recognised As Safe. Because it is a fibre your body does not absorb, it adds essentially no calories. The only special note is that thickened infant anti-reflux formulas containing it should be used only on medical advice.
In short, when E410 appears on a label it means the food contains a small amount of natural carob-seed gum added to improve texture and shelf stability, an ingredient widely considered safe and present in everything from premium ice cream to gluten-free bread.
