Is E410 Locust Bean Gum Safe to Eat? What This Thickener Really Is
If you have scanned the ingredient list on a tub of ice cream, a carton of plant-based milk, or a pot of cream cheese, you have probably seen E410, also called locust bean gum or carob bean gum. What is E410 locust bean gum?
Locust bean gum is a soluble fibre extracted from the seeds (the endosperm) of the carob tree, Ceratonia siliqua, an evergreen native to the Mediterranean. The same tree gives us carob powder, the cocoa substitute. The seeds are de-husked, milled, and purified into a fine off-white powder that is almost pure galactomannan, a long-chain natural carbohydrate.
Because it is a plant fibre rather than a synthetic chemical, locust bean gum is vegan, vegetarian, gluten-free, and suitable for halal and kosher diets. It has been used in food for centuries; the carob seed was even the original reference weight for the word carat used by jewellers.
What does it do in food?
E410 is a thickener and stabiliser. In tiny quantities, typically 0.1 to 0.5 percent, it does several jobs at once:
- Stops ice cream from forming gritty ice crystals during freeze-thaw cycles, keeping it smooth.
- Thickens plant-based drinks such as oat, almond, and soy milk so they feel like dairy.
- Keeps cream cheese, processed cheese, and yoghurt from separating.
- Improves the texture of gluten-free bread, where it mimics some of the elasticity that gluten would normally provide.
It works especially well alongside other gums. Locust bean gum combined with xanthan gum (E415) or carrageenan (E407) produces a firmer, more elastic gel than either could alone, which is why you often see them listed together.
Is E410 safe to eat?
Yes. Locust bean gum is approved as safe in the European Union, the United Kingdom, and the United States, where the FDA classifies it as Generally Recognised As Safe (GRAS). The European Food Safety Authority (EFSA) reviewed it in 2017 and found no safety concern at current usage levels, and did not even set a numerical Acceptable Daily Intake, which regulators only do for ingredients considered very low risk.
Your body does not digest locust bean gum the way it digests sugar or starch. It passes through largely intact and behaves like dietary fibre, which is why it has no meaningful calories.
Possible side effects
For the vast majority of people there are no side effects at the small amounts found in food. As with any soluble fibre, eating a large quantity could cause mild bloating or gas, but you would have to consume far more than any normal serving delivers.
One genuine caution applies to infant formula. Locust bean gum is sometimes added to anti-reflux formulas to thicken them. This should only be used for babies on the advice of a doctor or health visitor, because very young or premature infants can have sensitive digestive systems.
Foods that commonly contain E410
You will most often find locust bean gum in ice cream and frozen desserts, cream cheese and processed cheese, plant-based milks and yoghurts, salad dressings, soups, baby foods, and gluten-free baked goods. Many premium brands choose it precisely because consumers recognise it as a natural, plant-derived ingredient rather than a synthetic one.
The bottom line
E410 locust bean gum is a natural carob-seed fibre used in very small amounts to improve texture and stability. It is widely regarded as safe by EFSA, the FDA, and the UK Food Standards Agency, is suitable for nearly all diets, and contributes a little fibre rather than any harm. Unless your doctor has advised otherwise for an infant, there is no reason to avoid it.
