What is E412 guar gum?
Guar gum is a soluble fibre made by milling the seeds of the guar plant, Cyamopsis tetragonoloba, a drought-tolerant legume grown mainly in India and Pakistan. The seed endosperm is ground into a fine powder that is rich in a natural carbohydrate called galactomannan. That galactomannan is what gives guar gum its remarkable thickening power.
Because it comes straight from a bean, guar gum is vegan, vegetarian, gluten-free, and suitable for halal and kosher diets. It is one of the most cost-effective natural thickeners available, which is why it appears in so many products.
What does it do in food?
Guar gum is an extremely efficient thickener and stabiliser. It can thicken cold liquids without heating, and gram for gram it is several times more powerful than cornstarch. In food it:

Yes, at the levels used in food. Guar gum is approved across the European Union, the United Kingdom, and the United States, where the FDA lists it as Generally Recognised As Safe. The European Food Safety Authority re-evaluated it in 2017 and concluded there was no safety concern at typical usage levels. Because it is a fibre your gut does not absorb, it contributes virtually no calories and actually counts toward your daily fibre.
Researchers have even studied guar gum for potential benefits, including a modest role in slowing the rise of blood sugar after meals and supporting healthy cholesterol levels, thanks to its soluble-fibre behaviour.
Possible side effects
At the small amounts in normal food, side effects are rare. In larger quantities, soluble fibre can cause bloating, gas, or loose stools, so concentrated guar gum supplements should be taken with plenty of water.
There is one important historical lesson. In the 1990s, weight-loss tablets that were essentially compressed guar gum were banned in several countries after they swelled in the throat or oesophagus and caused blockages. That risk applies to large dry pills, not to the trace amounts dissolved into food, which are completely different and safe.
